Microbiology of Food
Web Exercise
1. Microbial fermentation to produce food has been exploited for thousands of
years. Search the Internet to find information on fermented foods so that you
can assemble a menu like one that might be found in a restaurant. Be sure to start
with items that may be included in salads, then soups, entrees, deserts and beverages.
2. Go to the U.S. Food and Drug administration web site and find out the source
of Giardia lamblia, Entamoeba histolytica, and Acanthamoeba spp. and the diseases
they cause.
