  2. Discuss the major functions of the vitamins and minerals important in bone health
  3. Describe the major functions of micronutrients in body defense systems (i.e., antioxidants and immune function)
  4. List 3 important food sources for bone-building nutrients and dietary antioxidants
  5. Describe how each vitamin and mineral contributing to bone health or body defense systems is absorbed, transported, stored, and excreted
  6. Describe the deficiency symptoms of the nutrients important in bone health or body defense systems
  7. Describe the toxicity symptoms from the excess consumption of the micronutrients functioning in bone health or body defense systems
