  • Recognize important sources of these vitamins.
  • Describe the signs and symptoms of deficiency.
  • Classify the chemical and physical properties of the individual vitamins.
  • Identify the vitamins most likely to be toxic when ingested in large amounts.
  • Explain the rationale for establishing the RDA.
  • Identify the vitamins that may be deficient in the North American diet.
  • Recognize the important role of nutrients in possibly preventing cancer.
