Food, Nutrition & Wellness ©2010Chapter 29:
Eggs, Beans, and NutsChapter SummariesEggs, beans, nuts, and seeds—part of the Meat and Beans Group—are high in protein and other nutrients. Enjoy and combine them with other foods. Buy eggs, beans, and nuts wisely and store them properly for freshness and food safety. Eggs serve many functions in recipes. Both cooking them and whipping the egg whites coagulates their proteins. Eggs can be prepared in many ways. Uncooked dry beans must be soaked for at least fours hours and take one to three hours to cook. Canned beans are already cooked. Nuts and tofu are very versatile foods and can be added to many dishes. Nuts are also often eaten alone. Content and Academic Vocabulary Content Vocabulary
