  • List the functions of each fat-soluble vitamin.
  • Identify food sources and state the recommended intake of each of the fat-soluble vitamins.
  • Describe the signs and symptoms of fat-soluble vitamin deficiencies and toxicities.
  • Describe the procedures used to assess nutritional status of fat-soluble vitamins.
  • Identify the population group or groups at risk for fat-soluble vitamin deficiencies.
  • Discuss those individuals most likely to need supplements and how to select a supplement.
