A. Eating   In the last 30 years, consumers have made a major shift in their food consumption. Beef and eggs are consumed less often, poultry and fish more frequently. Fruits and vegetables are a major part of the diet, as are whole grains. The U.S. Department of Agriculture reports these changes in food consumption: Fruits: up 125 percent Low-fat milk and yogurt: up 202 percent Whole grains: up 245 percent Fish: up 39 percent Red meat: up 5 percent Chicken: up 105 percent Broccoli: up 770 percent Green vegetables: up 169 percent
